Since the beginning of the century, every Tuesday throughout the winter, Lalbenque near Cahors has the biggest truffle market in the south-west. The sellers, truffle-growers of the Quercy, meet buyers come from all the rest of France and sometimes even from abroad.
Their respective days are marked by a series of ritual gestures which they make until the sacred time of the market.
