Not only is Aïd el Kébir a Muslim religious festival, it is also a family celebration in which the meal is a special instant of tradition and culinary ritualisation.
The mealtime puts a seal on the sharing, reinforces the symbolism of belonging to a culture with all the subtlety of flavours, a festival of tastes serving to perpetuate them.
On the day of Aïd a sheep used to be slaughtered to commemorate Abraham’s sacrifice, today it is bought at the butcher’s; yet the tradition is being adapted, and from mother to daughter, the ground wheat is rolled out and the bread is kneaded...
